PELÍCULAS COMESTIBLES PARA USO EN CIRUELA (Spondias purpurea)

Abstract

Las películas comestibles (PC) son capas delgadas de polímeros que pueden consumirse y emplearse en la superficie de un alimento. El objetivo de este trabajo fue elaborar PC de maltodextrina adicionadas extracto de maguey morado (Rhoeo discolor)y vainilla, para usarse en ciruela (Spondias purpurea). Como base para las películas se usó 3 % de maltodextrina, 1% de pectina y 1 % de glicerol, adicionando para una PC, 2.5 % del extracto R. discolor y para otra 1000 ppm vainillina. A cada PC se le determinó, humedad, solubilidad, pH y °Brix. Todas las películas tuvieron 100% de solubilidad, 7° Brix y el pH fue de 2.86, 2.64 y 2.65 para las PC con R.discolor, maltodextrina y vainillina respectivamente. El uso de PC de maltodextrina y vainillina extendió la vida útil de S. purpurea hasta por 7 días a temperatura ambiente y 12 días a 5°C.
