PROPIEDADES ANTIOXIDANTES DEL LITCHI (Litchi chinensis Sonn)

Abstract

En el organismo se llevan a cabo reacciones de oxidación esenciales para los procesos metabólicos celulares. El resultado de estas reacciones es la generación de moléculas con un alto poder oxidante, los radicales libres. La inhibición de estas moléculas es mediada por compuestos bioactivos llamados antioxidantes, generados por el organismo o presentes de forma natural en plantas y frutos. El litchi (Litchi chinensis Sonn) es un fruto de clima tropical, no climatérico, ovoide, color rojo intenso, con una pulpa blanca traslúcida y una semilla color marrón, que se cultiva en diversos estados del país, incluyendo San Luis Potosí. Varios estudios han comprobado la potente actividad antioxidante que presenta, por lo que en esta revisión se analizan las propiedades del fruto del litchi y la relación de su actividad antioxidante, con el procesamiento y almacenamiento.
