Determinación De Actividad Antioxidante Y Microencapsulación De Compuestos Activos De Opuntia Ficus-Indica

Abstract

Actualmente la industria alimentaria busca desarrollar nuevos productos de valor agregado, utilizando técnicas como la microencapsulación. El nopal al provenir de un cultivo multipropósito, puede considerarse un alimento funcional. El objetivo de esta investigación fue determinar la actividad antioxidante y encapsular los compuestos activos a distintas muestras de nopal (Opuntia ficus-indica). Se realizó un extracto acuoso 1:1 (p/v), se añadieron tres biopolímeros al 20%, se midieron propiedades antioxidantes y fisicoquímicas. El extracto escaldado presentó mayor capacidad antioxidante (12.92%), los compuestos polifenólicos fueron mayores en la infusión en seco (1.69mgEAG/L); la goma arábiga seyal brindó mayor protección a los compuestos activos del nopal presentando mejor estabilidad de la capacidad antioxidante contenida. Por lo anterior se concluye la importancia del escaldado para inhibir de la oxidación de la verdura, además la goma arábiga seyal puede utilizarse como material de pared para proteger los compuestos activos del nopal.
