Perspectivas De Nuevos Productos A Base De Amaranto: Cerveza Artesanal De Amaranto

Abstract

Se propone una nueva opción para la comercialización de productos de amaranto, Cerveza de Amaranto. Existe el interés científico sobre los beneficios del amaranto que pudiera tener esta bebida fermentada para aquellas personas que la consuman. Así, el presente trabajo relata las diferentes bondades, que contiene internamente el grano de amaranto, los descubrimientos recientes y las perspectivas para crear una bebida fermentada a partir de este grano del campo mexicano. Un primer lote de cerveza de amaranto fue elaborado tomando como base una cerveza tradicional tipo Blonde Ale. Se realizó una evaluación sensorial, donde se compara una cerveza tradicional tipo Blonde Ale con la cerveza de amaranto de la misma denominación. Los resultados obtenidos fueron analizados, teniendo una calificación global de 3.97 para la cerveza control contra 4.38 para la cerveza de amaranto. De igual forma, se analizaron diferencias en el contenido proteico, viendo particularmente la existencia de proteínas aportadas por la introducción del amaranto.
