Análisis de composición proximal del jugo de caña de azúcar cultivada en la Huasteca Potosina

Abstract

A lo largo del tiempo la caña de azúcar ha sido usada como una fuente de sacarosa. El jugo de la caña de azúcar es un líquido de consistencia viscosa, color opaco que puede ir del marrón a verde oscuro. Las características físicas y/o químicas pueden variar debido a factores como la variedad, edad, madurez, método de cultivo, entre otros, afectando directamente la calidad del producto. El objetivo de este trabajo fue conocer el contenido de algunos componentes del jugo de caña obtenido de la plantación ubicada en el Instituto Tecnológico de Ciudad Valles. Los resultados reflejaron un alto contenido de humedad y carbohidratos, mientras que el de cenizas y proteínas fueron las proporciones más bajas.
