Estudio Exploratorio del contenido de nutrimientos de Parmentiera Aculeata

Abstract

Parmentiera aculeata es un árbol originario de México y el norte de América Central, particularmente es muy abundante en la región de la Huasteca Potosina donde se desarrolla en un ambiente propio de la selva baja caducifolia. El aprovechamiento principal son sus frutos, los cuales son parecidos a pepinos alargados, de color verde-amarillento, jugoso y de sabor dulce; el fruto crece continuamente durante todo el año. Frecuentemente, los frutos son utilizados como alimento de forraje para animales y, en menor uso, para consumo humano. Así como también posee un uso medicinal. Existe muy poca información química documental acerca de este fruto, por lo que se llevó a cabo una determinación de la composición proximal del chote mediante el uso de métodos analíticos para explorar su uso como fuente de nutrimentos. Por lo tanto, en este trabajo se presentan los resultados de la determinación de humedad, cenizas, proteínas, grasas y carbohidratos.
