Jamón a base de tilapia negra (Oreochromis niloticus)

Abstract

En México los embutidos cárnicos son productos de alto consumo; estos son elaborados con diversos tipos de carne de ave, cerdo y otras mezclas, pero estos productos no aportan un valor nutritivo suficiente para la dieta de los consumidores. Por este motivo, se presenta la siguiente investigación con el objeto de elaborar un producto cárnico (jamón) con carne de tilapia negra (Oreochromis niloticus), que además de otorgarle un valor agregado, aporte un valor nutricional significativo y así evaluar sus características químicas y sensoriales. Además de estudiar la aceptación del embutido, se realizó un análisis proximal para obtener los valores nutricionales y así evaluar la calidad nutricional de acuerdo con los parámetros requeridos en la normativa vigente, por lo que resulta que el producto obtenido se puede considerar como una alternativa en la dieta recomendada para la salud humana.
