Embutidos de conejo, un producto alimenticio de mayor aporte nutricional

Abstract

En México, los embutidos cárnicos como jamón, salchicha y chorizo son productos de alto consumo, los cuales son elaborados a través de diversos tipos de carne de ave, cerdo y otras mezclas, pero en realidad dichos productos no aportan un valor nutrimental suficiente a la dieta humana, por esta razón en la carrera de Ingeniería en Industrias Alimentarias del Instituto Tecnológico de Ciudad Valles preocupados por los diversos problemas de salud pública que se viven hoy en día como la hipertensión, diabetes y obesidad, se ha dado a la tarea de realizar la investigación necesaria para encontrar nuevas alternativas de carne a favor de la salud que sean factibles de industrializar, realizando embutidos a base de carne de conejo de mayor aporte nutricional y gran aceptación sensorial.
