Análisis de espacio de color CIELAB de piloncillo elaborado en la Huasteca Potosina

Abstract

El piloncillo o azúcar de caña no centrifugado es uno de los subproductos de mayor impacto en la comunidad de la Huasteca Potosina. La presentación tradicional del piloncillo es en forma de conos, recientemente en forma granulada. La consecuencia al no tener una misma metodología de producción a nivel regional provoca la elaboración de piloncillos con diferentes características y tonalidades en el color. Por lo anterior, el presente trabajo propuso analizar diversas muestras de piloncillo elaborado en la Huasteca Potosina bajo el análisis de espacio de color CIELAB como un método de medición de color para el control de calidad. EL empleo del software InteliColor permitió llevar a cabo dicho análisis, resultando en una estrategia adecuada para determinar y cuantificar los parámetros L*a*b* del color promedio de los piloncillos empleado. Estudios futuros son necesarios para definir los colores deseados en cada sistema de producción.
