Elementos normativos en los servicios de restauración de la industria turística cubana

Abstract

La infraestructura nacional de la calidad juega un papel relevante en el desarrollo productivo y empresarial de los países, así como en el comercio internacional y en la conformación de las cadenas globales de valor, al establecer las prácticas y normativas aplicables a los diversos aspectos de la producción, los bienes y servicios. El objetivo de este trabajo es reflexionar sobre los componentes de la Infraestructura Nacional de la Calidad en Cuba y establecer los elementos fundamentales que garantizan el soporte y las prácticas asociadas a la calidad, seguridad y responsabilidad ambiental de los servicios de restauración que se ofrecen en el sector turístico del país. Fundamentalmente, se centra la atención en la contribución que aporta el componente normativo a estos efectos y al aseguramiento de la inocuidad de los alimentos, como parte de un sistema integrado de gestión en los servicios de restauración alimentaria.
