Uso de tres tipos de antioxidantes para la conservación de plátano verde (musa × paradisiaca), mínimamente procesado y empacado al vacío

Abstract

En la Planta de Procesamiento de Productos Cárnicos y en el Laboratorio de Microbiología de los alimentos de la Facultad de Ciencias Pecuarias de la Escuela Superior Politécnica de Chimborazo ESPOCH, se evaluó el uso de tres tipos de antioxidantes para la conservación de plátano verde (Musa* paradisiaca) mínimamente procesado empacado al vacío, concluyendo que las mejores características físicas – químicas se alcanzó al utilizar citrosan en plátano verde mínimamente conservado; con el mayor valor de grados Brix (5,178), y el índice de madurez más alto (38,84) y para los análisis de contenido de microorganismos mesófilos, determinaron que el plátano verde mínimamente conservado con ácido ascórbico presentó los valores más bajos (1,854 E+03UFC); en tanto que, el menor contenido de mohos y levaduras fue registrado en el plátano verde mínimamente conservado del grupo control; sin embargo, al utilizar citrosan comparte rangos de significancia al conteo, siendo también bajo, superando las exigencias de calidad del Codex alimentario.
