Higiene alimentaria, una necesidad en las instalaciones turísticas que brindan servicio de alimentos y bebidas

Abstract

La crisis alimentaria que acontece en el mundo en los últimos tiempos y el hecho de que la alimentación es una necesidad primaria y fundamental del hombre, justifican el por qué la seguridad del consumidor, es un aspecto que preocupa cada vez más a la Organización Mundial de la Salud (OMS) y una de las características enunciada en el concepto de calidad que establece la Organización Mundial del Turismo (OMT). Atendiendo a lo anterior, el presente artículo tiene como objetivo: brindar información sobre los principios básicos de la higiene alimentaria y su incidencia en la salud del consumidor, a fin de que todo el personal que labora en instalaciones turísticas que brindan servicio de alimentos y bebidas se sensibilicen con la temática, y reconozcan la necesidad de garantizar que se comercialicen alimentos inocuos , mediante una vigilancia estricta de la higiene en todos los procesos que forman parte del producto restauración.
