Abstract

En la alimentación actual del pueblo cubano han intervenido diferentes componentes étnicos; hispánicos, africanos de diversas etnias, aborigen, chinos, árabes y caribeños, para sólo mencionar los fundamentales. El presente artículo pretende analizar las características generales de las comidas y bebidas de la población rural en la provincia cubana de Las Tunas. Para la obtención de la información fue necesaria la aplicación de métodos y técnicas que permiten la triangulación de datos recogidos en el proceso investigativo.
