Vid, Vino, Y Cultura Occidental

Abstract

El cultivo de la vid y el uso de sus frutos como alimento y bebida es una actividad que a través de los siglos ha navegado al lado de la cultura occidental. Se rememora esa relación y se busca redescubrirla con los nuevos enfoques sociales de la ciencia y la tecnología (CTS), reconocerla en toda su amplitud y significación. Se muestra como cada época histórica y de desarrollo de la ciencia enriqueció la actividad con nuevas métodos, técnicas y tecnologías. En la actualidad en muchas latitudes la agroindustria se ha convertido en un factor relevante de progreso económico y social. Las nuevas concepciones vinculan orgánicamente a la bodega y a la sociedad, la carrera de enología se encuentra en el currículo de varias universidades y proliferan las investigaciones científicas y publicaciones temáticas. Por otra parte, el consumo moderado de vino y sus beneficios fisiológicos están reconocidos. Concluye con la exposición de las principales características y limitaciones de la actividad en Cuba, en especial su carácter artesanal y urbano.
