El Sorgo En La Alimentación De Niños Celiacos: Una Alternativa

Abstract

Uno de los principales problemas identificados a resolver, es contribuir a la calidad de vida, mediante la alimentación de los niños celíacos los cuales padecen una enfermedad denominada “celíaquía”. Se ha demostrado que el cultivo del sorgo es factible, basado en sus características de rusticidad, resistencia a la sequía, la realización de varias cosechas, efecto alelopático, etc., así como la no realización de productos químicos en el control de elementos nocivos; todo lo cual contribuye a la obtención de harina para la elaboración de productos de satisfactoria calidad. Se presenta el sorgo como alternativa. El presente trabajo está encaminado a demostrar la posibilidad de la utilización del sorgo en la alimentación a niños celíacos.
