Otel Isletmelerinin Yiyecek Icecek Bolumunde Ic Kontrol Sisteminin Etkinliginin Degerlendirilmesine Yonelik Bir Uygulama

Abstract

Gunumuzde turizm endustrisinin oneminin giderek daha fazla ulke tarafindan anlasilmasi, konuklarin istek ve beklentilerinin degismesi uluslararasi alanda buyuk bir rekabetin dogmasina neden olmustur. Bu rekabet ortaminda, otel isletmelerinin ustunluk saglayabilmesi hizmetlerindeki kaliteyi arttirmasi ve gunun degisen kosullarina uygun olarak yeni hizmetler ortaya koymasi gerekmektedir. Diger yandan otel isletmelerinde parasal islemlerin fazla olmasi, cok sayida gelir merkezinin bulunmasi ve birim degeri yuksek urunlerin satiliyor olmasi, soz konusu isletmelerin ozellikle yiyecek-icecek bolumlerinde etkin bir ic kontrolu zorunlu kilmaktadir. Bu baglamda, Izmir’de faaliyet gosteren bes yildizli bir otel isletmesinin yiyecek icecek bolumunde uygulama calismasi yapilarak ic kontrol sisteminin etkinligi arastirilmistir.
