Regionale Produkte in der Gemeinschaftsverpflegung: aktuelle Situation, Hemmnisse und Förderndes bei der Verwendung

Abstract

Local products in catering are coincidentally incorporated in the food supply. The use of regional offers a number of benefits, increasing the porportions are politically desirable. Selected results of an empirical study on catering plants of the metropolitan region Hamburg and of the region HanseBelt show that providers are open in relation to local products and see the incorporation in menus as a good way to increase customer loyalty. Problems arise from the lack of special product labelling, in the range lists of the relevant supplier the products are not clearly identifiable. Suppliers are partly all-rounder delivering throughout Germany and regional offers are only partial supported. For product groups such as fruits and vegetables, milk and dairy products or beverages however, specialized suppliers are found, while for the catering plants prices, reliability of supply and the quality of the product are of crucial importance. Customers are similarly inclined to local products with environmental considerations and the general trust in local products as the main motives. The ongoing implementation of the use of local products will largely depend on the extent to which barriers of ordering and procurement are eliminated, and good quality of local products can be guaranteed at reasonable prices. Regionale Produkte werden in der Gemeinschaftsverpflegung (GV) bisher eher zufällig in das Speisenangebot integriert. Ihre Verwendung bietet eine Reihe von Vorteilen, die Erhöhung des Anteils ist politisch gewollt. Ausgewählte Ergebnisse einer empirischen Untersuchung bei GV-Betrieben der Metropolregion Hamburg und der Region HanseBelt zeigen, dass die Anbieter regionalen Produkten offen gegenüber stehen und hierin eine Möglichkeit der Kundenbindung sehen. Probleme ergeben sich aus der mangelhaften Kennzeichnung der Produkte, sie sind in den Sortimentslisten der einschlägigen Lieferanten nicht eindeutig identifizierbar. Lieferanten, die im ganzen Bundesgebiet ausliefern, können sich regionale Angebote nur partiell leisten. Einzelne Produktgruppen wie Obst und Gemüse, Milch und Milchprodukte oder Getränke sind dagegen bei spezialisierten Lieferanten zu finden, wobei für die GV-Preise und Zuverlässigkeit der Lieferung sowie die Qualität der Ware eine entscheidende Rolle spielen. Die Kunden sind ähnlich offen wie die Anbieter, hier überwiegen in den Einstellungen ökologische Erwägungen und Vertrauen, das generell in regionale Produkte gesetzt wird. Die nachhaltige Implementierung des Einsatzes regionaler Produkte in der GV wird im Wesentlichen davon abhängen, inwieweit Barrieren bei Bestellung und Beschaffung ausgeräumt und gute Qualität zu angemessenen Preisen gewährleistet werden kann.
