Abstract

In a context of expansion of organic food market globally, Spain is a particular case. Although the area under this crop grows at a rapid pace, the demand can not absorb the supply of food, so most of them are destined for foreign markets. In this sense, the development of domestic demand is a priority, which requires a better understanding of consumption patterns. Thus, in this paper we study the influence of sociodemographic variables on the purchase of organic food through an analysis of consumer panel data; this allowing complete information obtained in other studies in which there is no convergence of results. Finally, the results show that there is no standard consumer profile of organic food but this varies by product category.
