Abstract

The high price of organic extra virgin olive oil _AOVEE- front of his namesake conventional, extra virgin olive oil conventionally produced -AOVEC-,is noted in the literature as a factor limiting their use. However, measuring the difference between the prices of both oils is a matter that has not been discussed in literature, and that is the main objective of this work, which also analyzes the relationship between the evolution of prices of AOVEE and AOVEC. To do so, it has been created a database of target prices, which are applied various statistical analysis. Results confirm that the difference between the prices of of both oils is of such dimension that exceeds the maximum willingness to pay for AOVEE. Therefore, the main conclusion is that the price differential between AOVEC and AOVEE is an obstacle to the development of AOVEE demand in Spain.
