Abstract

The aim of this paper is to present the result of a research carried out in a small coffee producer cooperative located in Escuintla, a county in the Mexican State of Chiapas. This research reviews and documents the experience of this cooperative, the certification for their coffee production system under organic and fair trade standards. Information is documented in its quality management system, mainly the internal control, where the results notice the strategy followed in the design of its internal control system which allowed this organization to achieve the certification of its coffee production.....Este documento es el resultado de una investigación desarrollada en un organización de pequeños productores de café del municipio de Escuintla, en el Estado de Chiapas, México, cuyo objetivo planteaba documentar la experiencia de estos pequeños productores de café que han incursionado en la certificación de sus procesos de producción de café bajo estándares de producción orgánica y de comercio justo. Se documenta la información contenida en su sistema de gestión de calidad, principalmente el control interno, en donde lo encontrado da cuenta de la estrategia seguida en el diseño de su sistema de control interno lo cual permitió a ésta organización obtener la certificación de la producción de café.
