Formation et répartition des gains de productivité en élevage bovin viande. Qui sont les gagnants et les perdants sur les 35 dernières années ?

Abstract

Malgré une augmentation constante de leur productivité du travail, les éleveurs de bovins allaitants voient leur revenu stagner depuis plus de 30 ans. Cette hausse de la productivité du travail masque une baisse de la productivité des autres facteurs de production, pour, au final, aboutir à de très légers gains de productivité globale. L’ensemble des soutiens publics que perçoivent les éleveurs compense en partie la baisse de prix des produits agricoles. Les principaux bénéficiaires des gains de productivité des éleveurs et de la baisse de prix des produits agricoles sont les acteurs de l’aval de la filière.
