Gestion du risque et information des consommateurs : l'exemple du méthyle-mercure dans le poisson

Abstract

De plus en plus fréquemment, l'information des consommateurs est utilisée comme un outil de gestion des risques sanitaires, par le biais de l'étiquetage, de programmes de prévention ou de recommandations de consommation. Nous nous sommes particulièrement intéressés à ce dernier outil utilisé au niveau international pour la gestion du risque lié à la présence de méthyle-mercure dans le poisson. Dans ce cas, une recommandation vise à modifier les comportements de consommation afin de diminuer la consommation d'espèces contaminées en méthyle-mercure, tout en garantissant des apports suffisants en acide gras oméga-3 par la consommation d'autres espèces. Ce document montre, via une méthode expérimentale "de terrain", l'efficacité limitée d'une telle recommandation.
