Impacto económico del mérito genético carnicero en la cadena cárnica bovina

Abstract

Desde 1980, el Centro de Investigaciones Agrícolas Alberto Boerger (CIAAB) y su sucesor, el Instituto Nacional de Investigación Agropecuaria (INIA) han desarrollado programas de mejoramiento genético en conjunto con las sociedades de criadores de las principales razas de ganado para carne del país. Dentro de las evaluaciones genéticas de las razas Hereford, Angus, Braford y Limousin, uno de los índices de predicción del mérito genético publicados, DEP (Diferencias Esperadas en la Progenie), se relaciona con el área transversal del músculo Longissimus dorsi o área de ojo del bife (AOB). La selección por esta característica (DEP AOB) promueve animales con una mayor sección de dicho músculo, derivando en un mayor calibre del bife angosto, corte que posee alto valor industrial.
