Abstract

------------------------------------- Between 1984 and 2009, global duck meat production increased by nearly fivefold (4.75) and outperformed the rate of total poultry meat production. The grown was attributable to the recognition of the economic advantages of duck keeping, the favourable biological properties of duck products and the changes in the consumers’ preference. Duck farming can considerable contribute to the supply of human population with protein and to the improvement of food security. Extensive duck-keeping systems have been gradually replaced by intensive ones in more and more countries worldwide. Changes in type of utilisation entail also changes in duck genotypes and the structural rearrangement of the assortment of duck products. Seasonality of production and consumption of duck products is declining, whilst market competition is getting more and more intensive also for Hungary. Nowadays, assertion of environmental and animal welfare issues is absolute indispensable to meet consumer demand.
