A cadeia produtiva da carne de frango da região da Serra Gaúcha: uma análise da estrutura de produção e mercado [The production chain of chicken in the region of Serra Gaúcha: an analysis of the structure of production and market]
This paper analyzes and defines Sierra Gaucha’s productive network of chicken. Additionally, the econometric method is employed to evaluate the demand function for chicken. The main results point out the productive network of chicken is well structured. The actors of the network are organized in the upright line. The domestic production of chicken is concentrated in the state of Paraná, Santa Catarina, Rio Grande do Sul and São Paulo The Sierra Gaucha’s municipalities hold one fifth of all facilities and chicken output of Rio Grande do Sul state The demand elasticity related to price of chicken was 1.1 and the demand elasticity related to per capita income was about 1,0. Finally the cross elasticities related to pork and beef prices are not statistically significant.
