El consumo de hortalizas frescas en hogares de Mar del Plata

Abstract

El presente trabajo tiene por finalidad identificar la incidencia que el género del decisor de compra del hogar provoca sobre la frecuencia de consumo semanal de hortalizas frescas y en los casos en los que el decisor de compra es mujer, analizar perfiles de hogar que presentan diferencias en la frecuencia de dicho consumo. La base de datos utilizada fue relevada en la ciudad de Mar del Plata durante los meses de Mayo y Junio del año 2009 por el Grupo de Economía Agraria, en el marco del proyecto de investigación "Los alimentos funcionales: aspectos valorados en el consumo de vegetales". Para el análisis de los datos se aplicó instrumental no paramétrico -como la prueba U de Mann-Whitney, la prueba K de Kruskal-Wallis-, empleando el programa estadístico SPSS 18. Los resultados sugieren que los hogares marplatenses presentan diferencias en el consumo de vegetales según el género del decisor de compra y del perfil de hogar.
