Jodsalzverwendung In Produkten Des Lebensmitteleinzelhandels: Eine Statistische Markterhebung Für Deutschland

Abstract

Aus gesundheitspolitischer Sicht empfiehlt die Bundesregierung „Wenn Salz, dann Jodsalz“ bei der Zubereitung von Speisen und in der Lebensmittelherstellung (BMEL, 2017). Um den Umfang der Jodsalzverwendung in der Herstellung verzehrfertiger Lebensmittel sowie wesent-liche Bestimmungsfaktoren für dessen Einsatz zu evaluieren, wurde eine Vollerhebung der re-levanten Produktgruppen (30.345 Produkte) im Lebensmitteleinzelhandel durchgeführt. Der Anteil der Produkte, die mit einem jodierten Salz hergestellt sind, liegt insgesamt bei 28,5 %. Da den Rezepturentscheidungen der Verarbeiter eine Schlüsselrolle in der Jodversorgung der Bevölkerung zukommt, müssen ernährungspolitische Aufklärungsmaßnahmen u. a. vermehrt an diese adressiert werden.
