Del Lomo de Las mulas a la Clandestinidad: Dilemas entre las Exigencias Legales y el Sistema Tradicional de Producción del Queso Serrano de los Campos de Cima da Serra (Brasil)

Abstract

El trabajo explora las disyunciones existentes entre los parámetros higiénico-sanitarios constitutivos de la legislación y el sistema tradicional de producción de Queso Serrano, elaborado en el territorio de los Campos de Cima da Serra, región sur de Brasil. El trabajo muestra que, a pesar de la condición de clandestinidad de la producción de queso, los consumidores compran el producto atendiendo a criterios que van más allá de los requisitos formales establecidos legalmente, dando importancia a aspectos tales como confianza y reputación. El artículo pretende analizar cómo las familias productoras de Queso Serrano han manejado las dificultades y las amenazas relacionadas con la comercialización de queso, en un contexto en que la legislación sanitária ha hecho de la producción de este tipo de queso objeto de clandestinidad.
