ABSTRACT Agro-food manufacturing is the principal Andalusian manufacturing specialisation. This fact is very important in a peripherical region. The objective of this article is to analyse the most important transformation in Andalusian agro-food manufacturing in the period 1980- 1995. This evolution can be considered a manifestation of a more general dynamic: the transformations of patterns of structural change of peripherical regions in a international context influenced by processes of social and economic restructuring. The effects of restructuring in the agro-food manufacturing Andalusian case can be summarized in the next words. The growing of the sector has continued, but the social and economic cost of this growth have been very important. Employment and enterprises have been destroyed and a spatial concentration of value chains has been promoted.
