Abstract

[eng] A short economic story of french food industry - This paper presents an historical picture of the French agro-food dynamics in the second part of the XX th century. After emphasizing the remarkable economic expansion in this sector (specially the contribution to the balance of trade and to direct or inferred employment), the author listed the different scientific publications on this subject. He pointed out that we passed from an « agricolo-centrée» approach to a «strategic» vision. A prospective analysis indicates that the agrofood industry will have to face 3 challenges in the forthcoming years: like new forms of competition (by concentration, innovation, and quality), value-creation for the partners of the firm (shareholders, wage-earners, suppliers and customers) and governance (towards a loss of autonomy for small firms ?). [fre] Cet article présente une fresque historique de la dynamique de l'industrie alimentaire française dans la seconde moitié du XXe siècle. Après avoir montré l'essor économique remarquable de ce secteur (notamment sa contribution à la balance commerciale et à l'emploi direct ou induit), l'auteur procède à une recension des travaux de recherche sur le sujet. On montre ainsi que l'on est passé d'une approche «agricolo-centrée» à une vision «stratégique». Un éclairage prospectif indique que trois défis attendent l'industrie alimentaire dans les années à venir: celui des nouvelles formes de concurrence (par la concentration, l'innovation et la qualité), celui de la création de valeur pour les partenaires de l'entreprise (actionnaires, salariés, fournisseurs et clients) et enfin de la gouvernance (vers une perte d'autonomie des pme?).
