Alimentation service et contraintes de temps dans les ménages

Abstract

[eng] As showed by E. Engel a century ago, increasing incomes lead the households to allocate a smaller part of their budget to food expenditures. In addition, the structure of consumption is changing by the substitution towards richer products, denoted as "the quality effect". This paper aims to explain the consumption of "convenience foods", as a part of this evolution, which is assumed to be related to the time constraints imposed on households. From an analysis of survey data, the author finds a positive relationship for every income category between the consumption of "convenience foods" and the degree a household is time constrained. [fre] Lorsque leurs revenus augmentent, les ménages ont tendance à affecter une part décroissante de leurs budgets à leurs dépenses alimentaires. Ce phénomène, mis en évidence il y a plus d'un siècle par E. Engel, s'accompagne d'une évolution de la structure de la consommation, par substitution vers des produits plus "nobles" et plus onéreux : il s'agit de l'"effet qualité". L'objet de cet article est de rendre compte d'une de ses dimensions : l'alimentation service, définie par l'auteur comme étant le recours à des produits — industriels ou non —, ou à des modes de consommation susceptibles de faire gagner du temps et/ou de simplifier la préparation des repas aux ménages. L'article se propose d'identifier ce type de produits par un indicateur de contrainte de temps, sur la base des résultats d'une enquête menée à bien par l'auteur en 1982. Il montre ensuite que les consommateurs les plus contraints en achètent plus que la moyenne, cette consommation étant en partie indépendante du niveau de revenu.
