Abstract

[fre] Dans toute étude des habitudes alimentaires en Chine deux éléments apparaissent très importants : tout aliment est d'abord destiné à "nourrir la vie" et s'intègre par là à l'ensemble de la pharmacopée traditionnelle tandis que tout repas est composé d'un aliment de base accompagné, en général, de compléments, les plats. A partir d'un aperçu de l'alimentation traditionnelle, on constate une grande continuité dans les pratiques alimentaires des Chinois depuis un siècle ; indiquant ce qu'il pense être des traits caractéristiques les régissant, l'auteur essaie d'en dégager les grandes lignes et d'envisager prudemment des possibilités de transformation. [eng] In any study about food habits in China two things seem very important : any food has to "nourish life" and in this way belongs to the traditional pharmacopea while on the other hand a meal is composed of a staple food generally completed by dishes. Through some samples of traditional food one aknowledges a great continuity in these practises during the last hundred years in China. Showing what he thinks to be underlying this fact, the author suggests, carefully, possible changes.
