Abstract

[fre] Les traditions alimentaires en Inde sont extrêmement rigides, du fait qu'elles font partie intégrante du rituel des différentes communautés religieuses. La symbolique de la nourriture et de sa préparation est très liée aux impératifs traditionnels de la santé, et elle est renforcée dans les périodes cruciales de la vie familiale. On assiste cependant à une lente modification du système des habitudes alimentaires. Un processus de rationalisation est véhiculé par la classe moyenne urbaine ; la Révolution Verte induit des changements d'habitudes alimentaires dans certaines régions. Le principal obstacle à une évolution de la situation nutritionnelle est le poids de la pauvreté. [eng] Food traditions in India are very rigid, since they are part of the religions rites of the different communities. Food and cooking traditions are closely linked to health and to the main events of family life. Yet a slow change does take place in food behaviour patterns. The urban middle class way of life introduces a rationalisation of cooking habits ; the Green Revolution obliges some food traditions to change in several regions. But the main obstacle to a diversification of the Indian diet is poverty.
