Abstract

[fre] D'après le Recensement Général de la Population en 1982, on compte 626 000 emplois salariés et non salariés dans les Industries Agricoles et Alimentaires (IAA) ou 436 000 hors les secteurs très spécifiques de la boulangerie et de la pâtisserie artisanales. . Le secteur des IAA est caractérisé par une grande stabilité de l'emploi au niveau global avec des modifications importantes à un niveau plus fin sectoriel et/ou géographique. . Ainsi, depuis la première crise pétrolière de 1973, alors que les emplois de l'industrie (hors IAA) baissaient de 20 % de 1974 à 1984, ceux des IAA sont restés stables ; néammoins il n'est pas évident que cette stabilité puisse être maintenue à l'avenir.
