Abstract

[fre] La consommation de la viande s'accroît plus rapidement que la population urbaine lorraine à partir des années 1850-1870 ; cette progression reste limitée à certaines catégories sociales. . De 1870 à 1914 le pouvoir d'achat en viande augmente pour tous les ouvriers, surtout dans la grande industrie, et proportionnellement plus pour les moins favorisés. . Entre les deux guerres mondiales, les plus modestes familles urbaines se contentent encore d'une quantité restreinte et achètent surtout les bas morceaux. . Après le retour à la normale en 1950, une clientèle en extension formule de plus en plus des exigences identiques. From 1850 to 1870, the meat consumption increased here more rapidly than the urban population though it still characterized some social classes. . From 1870 to 1914, the meat buying power grew on for all workers in great industry, mostly, and more, proportionally speaking, for the lesfs favoured of them. . Between the two world wars, the most urban families still lived on small quantities and bought lower quality pieces. . After 1950, the return to normal has led more and more numerous customers to show identical demands.
