[fre] Résumé Paris doit non seulement éliminer les boues de son pavé, les détritus domestiques, les déjections de ses habitants mais aussi tous les déchets d'origine artisanale. Ces derniers sont essentiellement de nature animale et produits notamment par les bouchers, tripiers, écorcheurs et les métiers du cuir. Ces activités vicient l'air, polluent l'eau de la Seine consommée par les Parisiens, et peuvent provoquer des incendies. Elles entretiennent de surcroît une puanteur chronique à laquelle contribuent les amidonniers, producteurs de déchets végétaux. L'évacuation de tous ces résidus aggrave la pollution de l'air et de l'eau. La Seine demeure à la fin du XVIIIème siècle le collecteur de la plupart des déchets d'origine artisanale. Son engorgement possible, ses atterissements fréquents ont menacé gravement aux XVII et XVIIIèmes siècles l'équilibre de la capitale, particulièrement en période de crue démographique. [eng] Abstract In spite of eliminating muds of pavingstone, domestic's ordures, inhabitants' evacuation, Paris must also discharge all his artisanal refuse. This refuse is essentially animal nature and is produced by the butchers, tripebutchers and tanners. These activities taint air, pollute water of « La Seine » that was drunk by the Parisians ; and may cause fire. In addition, they maintain a chronic stench from which contribute the star cher who is the main producer of the vegetal refuse. The evacuation of all these résidus worsen the pollution of air and water. At the end of XVIII century, « La Seine » is remain the collector of most artisanal refuse. It's eventual clogging and frequent landing of muds had threaten seriously the stability of the capital within the XVII and XVIII century, particularly during the demographic rising period.
