LA CALIDAD EN LA CADENA DE VALOR DEL PRODUCTO AGROALIMENTARlO. DIFERENCIAS PERCIBIDAS ENTRE EL AGRICULTOR INDIVIDUAL Y EL ASOCIADO /

Abstract

La transformación de la agricultura ha supuesto su integración progresiva al resto de los sectores de la economía y, al mismo tiempo, la disminución de la contribución de la actividad agraria al valor final de los alimentos. Por lo tanto, el peso específico de las actividades de transformación y distribución en el valor añadido total de los productos alimentarios ha ido creciendo en detrimento de la aportación de la agricultura. Estos cambios han originado la necesidad de buscar un nuevo marco de análisis para el sector agrario que permita convertirlo en competitivo. Para ello se han aplicado dos instrumentos de análisis estratégico: el paradigma E-C-R y la cadena de valor de Porter, cuyos orígenes se sitúan en la Teoría de la Organización Industrial; los cuales van a servir de base para un trabajo empírico que permita identificar diferencias entre las percepciones de los agricultores de papas integrados horizontalmente o asociados frente los no integrados en Tenerife, sobre la aportación de las actividades de la cadena de valor a la calidad del producto. El resultado no parece concluyente al no detectarse grandes diferencias entre las percepciones de los dos grupos de agricultores establecidos, aunque si se percibe una mayor incidencia en el cultivo y venta de la "papa de color" en los agricultores integrados, lo que abre una puerta a la diferenciación de producto vía calidad. Por otro lado, también se aprecian diferencias en los vínculos verticales de la cadena de valor de estos dos grupos de agricultores. / The agriculture transformation has supposed its progressive integration to rest of economy sectors and, at same time, the decrease of agrarian activity contribution tofinal value of foods. Therefore, the specific weight of the transformation and distribution alimentary activities in the total alimentary products value added have gone growing in detriment of the agriculture contribution. These changes have originated the necessity to look new agrarian sector analysis mark that allows to convert it in competitive. For that, have been applied two instruments of strategic analysis: the paradigm E-C-R and the Porter's value chain, which origins are located in the Industrial Organization Theory; which will serve as base for an empiric work that allows to identify differences on the contribution of value chain activities to product quality among potatoes farmers integrated horizontally or associated versus those not integrated in Tenerife. The result doesn't seem conclusive when not being detected big differences among the two groups of established farmers, although a bigger incidence about integrated farmers in the "color potato" cultivation and sale is perceived, which open a door to product differentiation via quality. On the other hand, differences are also appreciated in the verticals bonds ofthese two farmers groups value chain.
