Abstract

En la actualidad, la calidad en el servicio es un requisito indispensable que debe cubrir todo prestador de servicios debido a que existen organismos que certifican la correcta aplicación de las normas de seguridad de higiene. En el municipio de Petatlán, los prestadores de servicio desarrollan la actividad restaurantera durante décadas de manera empírica. La falta de conocimientos en el desarrollo de la actividad ha propiciado un manejo inadecuado en la preparación, manejo de los alimentos y el servicio a comensales, esto ha frenado el desarrollo económico del municipio y de los prestadores de servicios.
